Helpful Tips for Perfect Owl Cupcakes:

To ensure your peanut butter chocolate owl cupcakes turn out perfectly moist and flavorful every time, keep these tips in mind:

  • Achieving the Perfect Cupcake Texture: These cupcakes are designed to be soft, dense, and rich, much like a pound cake. The secret to this luscious texture lies in the buttermilk. If you don’t have buttermilk on hand, don’t worry! You can easily make a DIY version by adding one tablespoon of lemon juice or white vinegar to a measuring cup, then filling the rest of the cup with regular milk until it reaches the 1-cup mark. Let it sit for about 5 minutes until it slightly curdles, and voilà – instant buttermilk!
  • Choosing the Right Peanut Butter: For the best results in your cupcake batter, we highly recommend using creamy peanut butter, such as Jif or Skippy. Its smooth consistency blends seamlessly into the batter, ensuring an even distribution of flavor. While chunky peanut butter can work in a pinch, it might alter the texture slightly. However, steer clear of low-fat peanut butter, as its different composition can affect the moisture and richness of the cupcakes. • Working with the Chocolate Frosting: Our homemade chocolate frosting is incredibly easy and delicious, but it develops a slight crust fairly quickly once exposed to air. To achieve the smoothest application and ensure your decorations stick perfectly, it’s best to pipe the frosting onto each cupcake and immediately add the mini Nilla wafers, Reese’s Pieces, and peanuts. This speedy approach will give you the best-looking and most enjoyable owl cupcakes.
  • Baking Consistency: When baking your cupcakes, always trust your oven. Oven temperatures can vary, so keep an eye on them. The cupcakes are done when they lightly spring back to the touch and a toothpick inserted into the center comes out clean. Overbaking can lead to dry cupcakes, so watch them closely!
  • Cooling is Key: Ensure your cupcakes are completely cool before frosting. Frosting warm cupcakes will cause the frosting to melt and slide off, creating a messy situation. Patience during the cooling process will pay off with beautifully frosted treats.

With these tips, you’re well on your way to creating a batch of these enchanting Peanut Butter Chocolate Owl Cupcakes that will be the talk of your next gathering!

Ingredients

For the Peanut Butter Cupcakes

  • 1 1/3 cups all purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup butter
  • 1/2 cup peanut butter
  • 1 cup light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk

For the Chocolate Frosting

  • 1/2 cup butter (melted)
  • 2/3 cup baking cocoa
  • 3 cups powdered sugar
  • 1 1/2 teaspoons vanilla extract
  • 1/3 cup milk

For the Decorations

  • Mini Nilla wafers
  • Reese’s Pieces candy
  • honey roasted peanuts

Instructions

To Make the Peanut Butter Cupcakes:

  • Preheat your oven to 350 degrees F (175 degrees C) and line a 12-cup muffin tin with cupcake liners.
  • In a small bowl, whisk together the all-purpose flour, baking powder, and salt. Set this dry mixture aside.
  • In a separate medium-sized mixing bowl, using an electric mixer, cream together the softened butter and light brown sugar until the mixture is light and fluffy. Beat in the creamy peanut butter, large eggs, and vanilla extract until well combined and smooth. Gradually add the reserved dry ingredients alternately with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined, scraping down the sides of the bowl as needed to ensure everything is incorporated. Be careful not to overmix.
  • Fill each cupcake liner about two-thirds full with the batter. Bake for 20-23 minutes, or until the cupcakes are golden brown, lightly spring back when gently touched, and a wooden toothpick inserted into the center comes out clean.
  • Allow the cupcakes to cool in the muffin tin for about 10 minutes before carefully transferring them to a wire rack to cool completely. It’s crucial for them to be entirely cool before frosting.

To Make the Chocolate Frosting:

  • In a medium bowl, whisk together the melted butter and baking cocoa until smooth. Gradually add the powdered sugar, mixing until well incorporated. Finally, whisk in the milk and vanilla extract until the frosting is smooth, creamy, and free of any lumps. Adjust milk quantity slightly if you desire a thinner or thicker consistency.

To Decorate the Owl Cupcakes:

  • Once the cupcakes are completely cool, transfer the chocolate frosting to a piping bag fitted with a plain round frosting tip (or simply use a spoon and knife). Pipe a generous swirl of chocolate frosting onto each cupcake, creating a slightly mounded top for the owl’s head.
  • Immediately, while the frosting is still soft, place two mini Nilla wafers side-by-side into the center of the chocolate frosting. These will form the base of your owl’s eyes.
  • Gently press one orange Reese’s Pieces candy right between the two vanilla wafers to create the owl’s beak.
  • To add pupils, dab a tiny amount of frosting (or even melted chocolate or edible glue) onto the center of each vanilla wafer. Affix two brown Reese’s Pieces for the eyes, pressing them gently to secure.
  • Carefully place three honey-roasted peanut halves on each side of the cupcake, slightly tucked into the frosting, to represent the owl’s textured wings.
  • Finish off your adorable owl by placing two yellow Reese’s Pieces candies at the bottom edge of the cupcake to serve as the owl’s feet. Arrange them slightly apart to give the impression of little talons.
