My family and friends have come to expect a little soda-infused magic from my kitchen, especially my husband’s best friend, who often jokes that a visit isn’t complete without some meat cooked in soda pop or cola. And honestly, it’s true! I truly enjoy the depth of flavor and incredible tenderness that slow roasting meat in soda brings. While I have several tried-and-true combinations, today I’m thrilled to share one of my absolute favorites: this fantastic root beer pulled pork recipe.

Thick slices of fresh apples and sweet onions are layered evenly at the bottom of a slow cooker before adding the pork.

This recipe begins with a robust Boston butt pork roast. I like to give it a quick sear before placing it into the crockpot, building a foundational layer of flavor and a beautiful crust. Nestled on top of a bed of thinly sliced apples and onions, the pork then bathes in the sweet, bubbly embrace of root beer for a glorious 8 hours. This slow braising process works wonders, breaking down the pork fibers until it’s utterly fall-apart delicious. After cooking, the pork is effortlessly shredded and then re-coated with your favorite barbecue sauce, ensuring every strand is infused with that perfect balance of smoky, sweet, and tangy flavors. The result? The juiciest, most flavorful pulled pork sandwich you’ve ever had, guaranteed to be a crowd-pleaser.

  • Easy Hawaiian Rolls: Their subtle sweetness and fluffy texture are ideal for soaking up all the delicious pork juices.
  • Succotash Salad: A vibrant and refreshing choice that adds a pop of color and fresh flavors.
  • Watermelon Fruit Salad: For a light and sweet contrast, especially on a warm day.
  • Jalapeno Bacon Mac and Cheese: If you’re looking for ultimate comfort, this creamy, cheesy, and slightly spicy side is a winner.
  • Creamy Coleslaw: As mentioned, a classic and essential topping for any good pulled pork sandwich.

  • Cornbread: Sweet or savory, cornbread is excellent for sopping up extra sauce.

Frequently Asked Questions About Slow Cooker Pulled Pork

Does the meat have to be seared before it goes in the slow cooker?

No, searing the pork roast before slow cooking is entirely optional, though it is my personal preference and a step I highly recommend for maximizing flavor. Searing creates a beautiful browned crust on the exterior of the meat through the Maillard reaction, which adds a deeper, richer, and more complex flavor profile to the finished pulled pork. It also locks in some of the juices. While you’ll still get delicious and tender pulled pork without this step, a quick sear elevates the taste and visual appeal significantly. If you’re short on time, feel free to skip it, but if you have an extra 10-15 minutes, it’s worth the effort!

Why cook meat in soda pop or cola? The Science Behind the Flavor!

The secret to exceptionally tender and flavorful meat often lies in unexpected places, and soda pop is one of them! The simple truth is that the acidity found in most soft drinks acts as a fantastic natural tenderizer for meat. The acids in root beer (or cola, or Dr. Pepper) work to break down the tough connective tissues in the pork over a long cooking period, resulting in incredibly succulent, fall-apart tender meat. Beyond its tenderizing power, soda also contributes a wonderful depth of flavor. Root beer, with its distinct sassafras, vanilla, and caramel notes, infuses the pork with a subtly sweet and complex aroma that complements the smoky barbecue sauce beautifully. It adds an extra layer of sweetness and spice that you just can’t get with water or broth alone. For more on the science and great tips on how to cook with cola, check out this insightful article.

After the slow cooking process, the tender pork is removed from the crock pot, shredded using two forks, and then returned to the slow cooker to be mixed with sauce.

Can I use a different variety of soda pop or cola for this recipe?

Absolutely! While root beer provides a distinct and delicious flavor, this recipe is quite versatile. Other popular choices that work exceptionally well for pulled pork include Cola and Dr. Pepper. Both offer a similar level of acidity for tenderizing and contribute a sweet, caramelized note that complements barbecue flavors. Feel free to experiment with your favorite dark sodas to find your perfect match. However, it’s crucial to avoid using any diet soda or low-calorie varieties. The artificial sweeteners in these drinks can break down in unpredictable ways during long cooking times, leading to an unpleasant aftertaste and an altered texture. Stick to regular, full-sugar sodas for the best results.

What cut of meat works best for slow cooker pulled pork?

Choosing the right cut of pork is key to achieving that perfect, shreddable texture. While many cuts can work, I consistently recommend two in particular for the best pulled pork results:

  • Pork shoulder (also commonly known as Boston Butt): This is my absolute top choice and go-to for pulled pork. It’s wonderfully inexpensive, boasts a good amount of fat marbling (which renders down during slow cooking, keeping the meat moist), and shreds beautifully. No matter how you prepare it, a Boston butt consistently turns out juicy and never dry. It’s truly forgiving and delivers excellent flavor.
  • Pork loin: The other cut I recommend for pulled pork is pork loin. This option tends to be more expensive than pork shoulder, but it is also significantly leaner. This means less trimming and less fat to pick out, which some people prefer. If you can find pork loin on sale, it also makes a great choice, though you might want to add a little extra liquid or keep a closer eye on it to ensure it remains incredibly moist due given its lower fat content.

What can I use leftover root beer pulled pork for? Endless Possibilities!

One of the best things about making a big batch of root beer pulled pork is the delicious leftovers! This versatile meat can be transformed into a variety of exciting meals throughout the week. Don’t let a single shred go to waste!

  • Freeze it for later: This is a fantastic option for meal prep. Simply place cooled pulled pork in a heavy-duty freezer bag, press out all the extra air, seal tightly, and it will last beautifully for up to 3-4 months. When ready to use, thaw in the refrigerator overnight and reheat gently.
  • Make BBQ Pizza: Use it as a topping for homemade or store-bought pizza crust. Add a base of barbecue sauce, some shredded cheese, red onion, and your leftover pulled pork for an incredible BBQ chicken pizza alternative.
  • Use it for shredded tacos or burritos: Pulled pork makes an amazing filling for soft tacos or hearty burritos. Add your favorite toppings like salsa, guacamole, cheese, and a squeeze of lime.
  • Top baked potatoes: Transform a simple baked potato into a satisfying meal by piling it high with warm pulled pork, a dollop of sour cream, and a sprinkle of chives. Check out my recipe for BBQ Stuffed Sweet Potatoes for inspiration!
  • Add it to nachos or on top of french fries: Create epic loaded nachos or “dirty” fries by topping crispy tortilla chips or golden fries with pulled pork, melted cheese, jalapeños, and a drizzle of extra barbecue sauce.
  • Pulled Pork Sliders: Perfect for parties or a quick snack, serve the pulled pork on mini buns with a slice of cheese or coleslaw.
  • Pulled Pork Mac and Cheese: Stir the shredded pork directly into your favorite mac and cheese for an incredibly decadent and hearty dish.
  • Stuffed Bell Peppers: Mix the pork with rice and stuff into bell peppers for a comforting baked meal.

The possibilities are truly endless once you have a batch of this flavorful root beer pulled pork ready to go!

Ingredients

  • 1 3-4 pound Boston butt pork roast
  • 1 yellow onion
  • 2 gala apples
  • 12 ounces root beer
  • 1 18 ounce bottle barbecue sauce

Instructions

  • Season the pork roast generously with salt and pepper on all sides and sear in a hot pan over medium-high heat until deeply golden brown. This step is optional but highly recommended for flavor.
  • While the pork is searing, thinly slice the yellow onion and core and slice the Gala apples. Add these sliced onions and apples to the bottom of a 6-quart (or larger) slow cooker, creating a flavorful bed for the meat. Carefully place the seared pork roast on top of the apples and onions. Pour the entire 12-ounce bottle of root beer over the pork and aromatics. Cover the slow cooker with its lid and cook on low heat for 7-8 hours, or until the pork is incredibly tender and easily shreds with two forks.
  • Once cooked, carefully remove the tender pork roast from the slow cooker and transfer it to a large bowl or cutting board. Using two forks, shred the pork into desired consistency, discarding any excess fat. Discard the cooking liquids, apples, and onions from the slow cooker. Return the shredded pork to the now empty crock pot and stir in the entire 18-ounce bottle of your favorite barbecue sauce until the pork is thoroughly coated and glistening.
  • Serve the warm root beer pulled pork piled high on soft hamburger buns or slider rolls. For an authentic experience, top with a generous helping of coleslaw.

Notes

To freeze leftovers, allow the pulled pork to cool completely. Place it in a heavy-duty freezer bag or an airtight freezer-safe container, pressing out all the extra air before sealing. It will keep well in the freezer for 3-4 months. To reheat, thaw overnight in the refrigerator and gently warm on the stovetop or in the microwave, adding a splash of broth or water if needed to maintain moisture.
