That’s when inspiration struck: why not deconstruct this beloved appetizer and turn it into an incredibly easy dip? By simply combining all the glorious ingredients in a bowl, I created this amazing Pickle Thing Dip. The result? Half the work, all the incredible salty, creamy, and crunchy taste! You are going to absolutely adore this dip. And, if I may toot my own horn just a little bit, this was the very first recipe of mine that, immediately after tasting it, my mother-in-law insisted she *had* to have the recipe. And if that’s not a glowing endorsement, I don’t know what is!

One of the best things about this Cream Cheese Pickle Dip is how few ingredients it requires, and how readily available they are. You probably have most of these on hand already!

Ingredients

  • 1 2.25 ounce jar dried beef
  • 6-8 kosher dill pickle spears
  • 8 ounces cream cheese (softened)
  • 1/2 cup sour cream
  • 1 teaspoon dill weed

Instructions

  • Chop up the dried beef and dill pickle spears into small pieces. 
  • Mix together the cream cheese, sour cream and dill weed until well combined. Then stir in the chopped dried beef and dill pickles.
  • For best flavor, chill the dip for at least 30 minutes before serving. Serve with crackers, cocktail toasts, or your favorite dippers and enjoy!

Notes

This recipe will keep for several days in an airtight container in the fridge, but I like it best the day of making it when the flavors are freshest and the textures are at their prime. 

Also, feel free to substitute your favorite thinly sliced deli meat in the place of the dried beef. Ham, turkey, roast beef, and pastrami will all work well with this dip too, offering slightly different flavor profiles!
